I connected to my company wifi. Can they read my iMessages and/or track what I'm doing on my apps like Snapchat and Instagram? How much is my privacy protected when connected to public/company wifi?

They can't access what's on your phone but they can, if they chose, track traffic. Consult with your IT department for more information. Generally, you don't have much in the way of a right to privacy when using your employer's resources.
You can, and should, use a VPN when using an unsecured WiFi network.
