Of course, all religious holidays were never in the Apple calendar. Only christian holidays were. So now it's a level playing field. However, there is still the option to add the religious holidays that are meaningful for you.

Religious holidays are not on the US Holiday calendars other than Christmas.

You will have to ask Apple, for some reason it's not in the US calendar, but is here in the UK calendar - but it's not difficult to add the two dates to one of your own calendars

And Christmas is not really a religious holiday, in that sense of the word. Seems they have removed all religious holidays from the US calendar, in iCal or also on the iOS devices as well.
