Go to Settings>Safari>Search Engine>make your desired choice.

I know how to select particular search engine but I want it removed and I can't find away of deleting it.

If you select a different search engine, DuckDuckGo is effectively removed. There are three other choices in the menu. They are all choices which are made through the iOS interface, and cannot be removed, so I am not sure of what you mean by "but I want it removed."

Thanks for you replies but I got the impression that I added it to Safari when I originally viewed the web page. So are you saying it's always been in the Search Engine selection along with Google, Yahoo and Bing within Safari?

Not always, but it has been a choice for "several years."
