I discovered that my fusion drive is running APFS and I understood that is not supported yet.
Since I notice more instability of the system lately I wonder if this is the case.
Please note that I am running the official High Sierra and never installed the Beta.
Any idea?

Just to add, the APPLE SSD SD0128F Media is what used to be the SSD part of your Fusion drive. I can only speculate that your Fusion drive was not fused at the time of the High Sierra install and the installer only saw the SSD and converted it. Just guessing.
You no longer have a Fusion Drive.
A Fusion Drive looks like this;
Notice where under Macintosh HD says "CoreStorage Logical Volume". That is the tell-tale clue of a Fusion Drive.
No idea what could have happened but your Fusion drive is not fused. Perhaps that is why. Can only speculate as to what happened.
