My photos' portrait settings are lost when uploaded to my MacBook via iCloud. How do I retain those settings? I texted some of those photos to my family and the image in the message shows those retained their portrait qualities.

You need Photos 3.0 on High Sierra to be able to see the portrait effect of a photo.

You could duplicate a portrait photo on your iPhone and edit the copy - apply a crop or a lighting adjustment, then save the edited copy as new photo. This copy will have the effect burned in as a simple JPEG.
What version of macOS are you running on your MacBook, and what year MacBook is it? It might be too old to understand portrait settings.
