Apple Watch recording heart rate when not wearing the watch

Heart rate monitoring is one of the best features of the Apple Watch. For various reasons, I check my heart rate frequently. I've noticed that the health app shows records of heart rate during periods when I'm not wearing the watch. For example, the watch is on the charger next to my bed. I go to bed at, say, 11PM with the watch on the charger. The next day, I'm showing records of my heart rate thru 1AM the next day.

Two days ago I took a shower with the watch sitting on my bathroom vanity. From 4:03PM to 4:32PM, while not wearing the watch, the health app shows readings of 168BPM to 210BPM! Often fluctuating as much as 8 times in a single minute. My normal resting BPM is 55.

This is a new iWatch 3. I had the same issue with my first gen iWatch, too.

What gives?
