I've been putting off converting my beautifully organised iPhoto libraries into the newer Photos app. If I do this on my old iMac will I then be able to merge the resulting Photos library into the one on my MacBook Pro?

Yes. You can either use PowerPhotos or set each library as the System Photo Library, upload it to the iCloud, and download the merged library.
