I would like to know if the Apple iPhone 6s Plus charging cable works with the iPhone 8 Plus? Also, I have a longer, Amazon manufactured cable that I use for my 6s Plus. Will that also work?

All "Made for iPhone/iPad/iPod Lightning cables are supposed to be compatible with any Apple device with a Lightning port. There might have been slight differences over the years in the construction of Apple's Lightning cables, but they should all be forward/backwards compatible with any Lightning port device.
If you mean an AmazonBasics Lightning cable, then that should work just fine. Amazon has 85 entries in Apple's MFi Licensed Accessories database. You can enter "Amazon" as a brand name and see it.

They use the same Lightning cable, so yes, you can use the iPhone 6 cable to charge the iPhone 8.
