Follow the instructions here to pair and set up your Apple Watch:

If you are advised that your iPhone is not up to date when it is already running the latest version of iOS, then you may be trying to pair an Apple Watch that has had developer beta software installed on it.
If your Apple Watch is running watchOS developer beta software that has not yet been released publicly, then it cannot be paired to an iPhone running the current version of iOS 11.x. watchOS is also not user-downgradable.
Your options include:
- Return the Apple Watch to the seller for a refund.
- Wait for the newer version of iOS 11.x to be released in due course (it is not possible to say when that will be and is not allowed here to speculate).
- Contact Apple Support or make a Genius Bar reservation for assistance.
