I thought I recalled a checkbox feature in Pages, part of the outline feature, where you could tap/click in the box next to each item to mark it as completed, and a little red checkmark would appear. Or was that in Notes? Or am I thinking of the old AppleWorks?

If one has Pages v6.1 or later, a LaTeX equation can be entered into the Equation editor, that can produce a monochrome, or colored checkbox. One can control both the box and the checkmark colors.

You are definitely thinking of AppleWorks. No version of Pages has this facility. Notes in High Sierra (& maybe Sierra) now has this feature.
In Pages you would have to find a graphic with a checked box & insert that manually for each line. Numbers does have a checkbox format, but not Pages tables.
