How to create Subtotal in Numbers

No one at Apple Store training could tell how to create a subtotal in numbers. Example: Range of customers created revenue , at year end how to create subtotal revenue by customers.
Or Category Expense by IRS Code, at year end subtotal expenses by IRS Code.

Do I use SUMIF? What Formula?

Numbers: how do you count/sum figures for a certain date range? I have a whole year of recurring expenses and I'd like to count my expenses month to month. I used the SUMIF function to count all Gas expenses for example. But the figure returned is for the entire year. How do I tell Numbers to sum a category expense for a certain month like January for example???
