How to use my hard drives

I am new to Mac and my machine is the MacBook Pro 2017, i can not use my hard drives for exchanging data between them so the online suggestion is to convert the NTFS file system to exFAT but I'm afraid that I might lose data from my hard drives is there anyway so that I can use my hard drives on both environments and not loose data.

You need to either reformat the drives or install software such as Paragon NTFS on the computer. Note that your data should be on at least two drives; one may fail at any time.
