I'm about to buy the Apple Watch Series 3, but it's only compatible with the iPhone 5s with iOS 11 or later. I own an iPhone 5—not the 5s, just the 5. So will it work? I'm dying to know, since I really want one of these devices and finally have the money to buy it.

No, it will not work at all.
Apple Watch cannot be used at all (even for telling the time) without being paired to a compatible model of iPhone.
This is required in order to set up and use all models of Apple Watch, including for managing and syncing with the Apple Watch over time.
Apple Watch Series 3 (GPS) require an iPhone 5s or newer model of iPhone running the latest version of iOS 11.x.
