I have a Macbook Pro with 8gb RAM and a 256GB SSD. I am constantly running out of disk space even though I am showing over 25GB of free space after reboot.
Has anyone experienced similar issues?

Are you confusing hard drive space with RAM usage? Opening and quitting Office and or Chrome should have no impact on the amount of free space left on your hard drive.
Use the Activity Monitor app to verify that your Memory Pressure is green and that your Swap Used is zero.
25 GBs of free space is not a lot of space, so the fact that you're running out of disk space is not surprising at all.
Recommendations:
1. Delete files that you don't need, or transfer them to an external drive. (photo, movie, and music files generally take up the most space)
2. If possible, upgrade your internal drive to a larger size, i.e., 500 GBs, preferably a SSD.
Note: Your issue is not specific to the model of your Mac, MacBook Pro, but posting it to a forum area for 12" Retina MacBooks was not the best location for your posting.
That's a clue. Generally, when memory pressure is green, Swap would be zero. The Swap means that at some point your RAM was insufficient so the system started using 2GBs of space on your HD as virtual RAM.
Chrome can use a lot of RAM, especially if you have a lot of windows/pages open, are using plugins, and Flash. Office would only use a lot of RAM if you were working with really large documents. In any case, use Activity Monitor to get a handle on your RAM usage under extreme conditions.
And depending on the exact model of your MacBook Pro (not provided), you may be able to upgrade your RAM too.
I suggest you use the program created by Etresoft, a frequent contributor. It will provide a snapshot of your system which we can analyze to possibly determine the cause of your problem. Please use copy and paste as screen shots can be hard to read. On the screen with Options, please open Options and check the bottom 2 boxes before running. Click “Share Report” button in the toolbar, select “Copy to Clipboard” and then paste into a reply. This will show what is running on your computer. No personal information is shown.
I agree with Allan Eckert's recommendation. Etrecheck may reveal other issues that may be contributing to the problem.
Ordinarily, I wouldn't think that just running Chrome and Office would make your free space disappear. Plus, 8 GBs of RAM should be adequate for most Mac users.
Is there a way to delete the swap file?
No, it will disappear when it is no longer needed. It's now beginning to sound like you're running out of RAM forcing the use of a Swap file.
The Etrecheck will help, especially if you run the report when you're getting the low disc space warning.

No, definitely hard drive space. The low hard drive message pops up when it gets below 2gb.
Well you definitely need more free space. I don't why opening Chrome and Office would make it worse, but you still need to either delete/transfer files, or get a bigger hard drive.
Also, memory pressure is green but swap is over 2GB.
