How can I turn off Live Photo
I don’t want Live Photo every time I take a photo. Can I turn it off and on when I want, or do I have to remember to switch it off before I take a photo?

See the "Take a Live Photo" section in:
Take and edit Live Photos - Apple Support
where it says:
Live Photos is on by default on your iPhone 6s and later. If you want to take a still image instead, tap to turn off Live Photos. You can preserve your Camera settings so that Live Photos is always on or off. Go to Settings > Camera > Preserve Settings.

If you set Settings > Camera > Preserve Settings > Camera Mode 'on' it should remember what you last had selected in the Camera app
