If I have documents on my Mac and I'm signed in to one iCloud/itunes if I log out of this and sign back in with a different iCloud/itunes log in will my documents still appear on my mac ?

When you log into iCloud you use an Apple ID and the contents of that iCloud account are private to that Apple ID so if you log out of one Apple ID and log in wiht a different Apple ID nothing saved with Apple ID 1 will be available to Apple ID 2
