If you have met the requirements for an Activity Challenge, but the achievement has not yet been awarded, then Apple advises that you should allow nine days for it to be awarded:

The following steps may also help:
If you have not yet done so, then update your iPhone and Apple Watch (not iwatch) to the latest software, starting with your iPhone:
Check your personal information:
- On your iPhone, in the Watch app, go to: My Watch (tab) > Health.
- Check all settings, including selecting Yes or No for Wheelchair use rather than Not Set.
Close certain apps and then restart (normally) both your iPhone and your Apple Watch:
- If an app unexpectedly quits, stops responding, or won’t open - Apple Support
- Close the Watch app, Activity app and Health app on your iPhone.
- Close the Activity app, Workout app and Heart Rate app on your Apple Watch.
- Turn both devices off together, then restart your iPhone first:
If the issue persists, then it may help to unpair and re-pair your Apple Watch:
- You may prefer to wait until after the nine days have passed before trying this if the award has still not been credited by then.
- The Watch app on your iPhone takes a backup of your watch automatically when unpairing via the app.
- Initially choose to Restore from Backup during set up (most data and settings will be restored, with some exceptions, such as Apple Pay cards, passcode).
- If the issue persists, consider instead unpairing and setting it up as a new watch.
