What personal info can my boss access from a confiscated company SIM which had been used in my personal cell phone?

My company issued me a work iPhone which got broken. Instead of possibly loosing my ore phone I opted to purchase a new phone and install their sim in it. I had used the phone primarily as my personal phone and only did minimal work stuff with the phone. After 3 years of using the company SIM in my personal phone my employment ended. I’m curious what personal info is saved on the SIM card. If my boss installs the SIM in a computer instead of an iPhone (I went on Lost My Phone and locked my SIM) what data can he access?
