On my phone iCloud next back up size shows 5.7GB. I have turned off all back up options that phone allows me. This number shouldn't be 5.7GB, it should be less than 1GB.
I deleted all backups to free up storage in iCloud. I have all the 5GB (or almost all) available. I only want to backup contacts. Somehow, my phone comes up with a next back size of over 5G...what am I missing?

Your contacts should be synced to some account such as your iCloud, Gmail or Yahoo account. They would still be restorable even without a back up.
Open the Settings app. Tap on your name at the top. Tap iCloud and find Contacts and turn on the switch. Your contacts will now be synced to iCloud in real time. This is not the same as backup; contacts will be excluded from the backup if this switch is on. The contacts will also sync with any other device logged in to the same iCloud account, and can also be managed by logging in to https://icloud.com.

You can't back up just contacts. If you look at the article, there are some things that are backed up that you have no control over, such as device settings.
