Is it ok to move my Drum Kit Designer folder to an external SSD or is best to leave it where it is? It takes up a lot of space on Mac's internal HD which I'd love to get back.

Yes. You can move the entire Logic folder inside Application Support.
Use a symbolic link to point the folder from the new location to you old:
