I have got a new phone and have restored it from my last but I have my own apple account but it keeps asking me for my mother’s password when I try and download apps

If they were purchased using her account then that's what you will need to re-download them. Better would be to purchase your own copies unless you can use Family Sharing.

Then there's something still in there that's trying to get to Apple using her ID. Do you mean you just bought the apps with your ID and it is saying you have to enter hers before you can download them?????
