How do I remove people from group text?

Apple gives you that option for group imessage, all user using Apple devices.

You should talk to your phone carrier and let them know as MMS is their feature, threaten to stay away from them as well and see how far that gets you.

I said MMS is a carrier feature, I did not say switching phone carrier will allow you to do that. You should ask your phone carrier what option you have to remove user from their feature.

As Apple has given you that option for group imessage.
