how to transfer from old iphone and ipod to itunes on a windows computer

How do you transfer music from an old iPhone and ipod to iTunes? I updated my iTunes hoping it would make some change but it didn't. I have watched multiple videos and read a number of instructions. All seem to require and icon or button that I don't have on my computer. I have seen multiple apps for easy transfer. Are these programs legitimate and if so which is recommended? How can it be this difficult?

Syncing an old iPod to a new one I am trying to sync my old iTunes music from an old iPod to iTunes then sync my new iPod to iTunes. When i try to sync the old iPod to iTunes a lot of my music doesn’t transfer.
