What happens if you get a phone call while you are doing a software update? Does the phone stop updating? Will it ring?

You can get a phone call while it is downloading/preparing and it will not affect anything. Once you tap the button to install your phone will restart and you cannot receive calls.

No not when the software is downloading on your phone you won't get any notification until it is done.
