I called the the store and they forwarded me to Apple Support. About 45 minutes later on hold, I finally got an answer that it’s taking 5-6 weeks for the stores to get new batteries since everyone with iphone 6s plus are needing replacement now.

I was going through the same thing. They said that I would get an email from their battery team in 3-5 days, then I would get an email from the store once it was in stock and being held 2-5 weeks after that.

Sure it's taking that long. Part of the issue is that it doesn't even require battery health below any particular threshold before they'll do it. That, the publicity, and the price meant that they have to go their battery suppliers to get more. This is a pretty normal lead time to produce batteries. It was just that before there wasn't really much demand and they put in small orders.
