Double click to close apps on my iphone 6 and it restarts (not a hard reboot).

While you were erasing the profile did you also roll back your iOS to 11.2.6? If you did and it is still happening then I would guess it is a hardware error. Make a Genius Bar appointment and have it looked at but they won't do so unless you are on a public version.
I realize anyone can be on the public beta but one shouldn't be on it with a phone that they cannot be without.
