Best MacOS for early 2011 MacBook Pro?

I have an early 2011 MacBook Pro 15", i will change the old hdd with a new ssd.

Wich MacOS should run better on it?

Upgrading my old MacBook Pro (2.53 GHz, 17-inch, Mid 2010) I bought everything compatible for it, a 2TB SSD, a new battery, and better RAM. im still running the original OS that it came with, I never updated it. once I open my Mac and replace the parts and upgrade it, the highest OS it can run I’ve read is High Sierra. thats not in the Apple store anymore, how would I install it on my new SSD?
