backup up to phone with less memory?

i am got a new phone. Backed up my old phone to PC (iTunes). New phone has a lot less memory. Can i find a way to get into back up and strip out some things I don't need restored so i can reduce the size?

Sorry, no. Backups are are all or nothing. Restore the backup, then afterwards delete things you don't want or need.
