how do I transfer messages from my 7plus to my 8plus?

You perform a backup of your 7 plus (to iTunes or iCloud) and then load that backup onto your iPhone 8 plus. Be aware that anything on your 8 plus which is not on your 7 plus would be lost by doing this. For example, since setting up your 8 plus, if you've received calls or text messages, those would be lost if you install the backup from your 7 plus. More info:
