4s Recognition & Set Up

I set up my old 4S (iOS 7.1.2) for my mother in 2016 using my Mac mini OS 10.12.6

I now want to give her a 5C but when plugging the 4S is plugged connected to the Mac the only options appearing in iTunes is to set up as a new phone or restore from a previous back up. There is no option to back up the set and then seek to transfer it all to the 5C.

I am willing to input all of her numbers again from scratch although I would rather not.

Any help would be GREAT.

transfer data I have an old ipad in which the battery is dying. Picked up a new one, OS14.1 on both and tried to transfer data but something happened and it failed. beginner help I just bought a new Apple iPhone 11 promax and backed up my old iPhone eights and now it looks like most everything is on my new iPhone 11. But I am missing a few things and having problems between the two phones when I say hey Siri it answers on both phones so I shut off my iPhone 8. So I have to do that?
