Can this scratch my iPhone 7 sensor button

It's covered with layer of synthetic sapphire. A fingernail will not scratch it. That doesn't mean that it's impossible to scratch or break. Sapphire is extremely brittle and can crack (spectacularly) with enough force. Scratching would take something just as hard or harder. A fingernail won't do it, but maybe corundum sandpaper or contact with a diamond or sapphire/ruby would do it.

It shouldn't but I wouldn't make a habit of it.
