Can't Delete Signatures In Mail

I have a 2013 MacBook Pro running the latest version of High Sierra. Since upgrading to High Sierra I've had the problem with an excessively long Mail preferences window. In trying to delete my signatures to correct the problem - I used both the "-" button and selected them all and hit the "delete" key - I find the signatures just regenerate after I close and reopen the window or restart Mail. Any suggestions on how I can permanently delete those signatures?

Finder > Go > Go to Folder, copy and paste:

~/Library/Mail/

Select the latest “V” folder. For example if you see V2, V3 and V4 folders, open V4 (High Sierra is now V5, so open that one)

ex.

~/Library/Mail/V5/MailData/Signatures

manually delete the .signature document(s) there.

Did it. Then went into the Mail preferences and deleted the signatures. Restarted Mail, they were back. I noticed there are "property lists" .plist called "Signaturesby Account.plist" (last date modified, 2013) and "AllSignatures.plist" (last modified in 2017. Should I try deleting those too? They are not shown as "documents". I really appreciate your help with this.
