why is it that when i’m on SMS/MMS, i can’t send long paragraphs, send effects on my texts or even send photos?
I just want to be able to write long paragraphs, send photos and do more over SMS/MMS and I don’t know how.

Because it's not iMessage.
MMS should allow photos and small video. The effects are special to Apple's iMessage service and carrier's SMS service does not offer them
