ios update screen locks

Why does Apple ios insist on CONSTANTLY locking up my screen with it's forced updates?

My iPhone is on wifi networks for days and *nothing* but as soon as I'm on a hectic Film Set and I need to answer a hundred texts, Apple decides to start locking my phone with update screens. I'm not even on a wifi network, for crying out loud??? All I want to do is read a text, but I can't because the update prompt WILL NOT leave my screen, no matter what I do. I finally have to hard restart my phone to read my text.

Who comes up with these dumb ideas?

But, more importantly, how can I block these updates until I'm ready to update on my own?
