NFC on an iPhone is restricted solely to ApplePay and Health Apps designed to use NFC with their companies health device. Since it only has an effective range of a few centimeters it’s really not that useful with many other devices so Bluetooth would be the choice for wireless connections to peripherals like cameras.

This is an issue that is unique to that brand of car. Apple only uses NFC for Apple Pay. Your car charging pad unfortunately will activate Apple Pay each time you put your phone on the pad. You’ll have to cancel out of Apple Psy each time you put it there.
