How can I erase 7000 messages on my iPhone 6, but save the messages in files and archive??? My phone takes forever to erase every 5-6 messages!

Do you mean emails? If you're using an IMAP account (everything is in sync across all devices), I'd suggest doing it from your email provider's web interface or from your mail application on your computer.
You can't store something you want to delete. You either move the messages into folders or your delete them.
Instead of trying to delete 7K messages on your phone, manage them on your laptop/PC where you have greater control over them.
