I haven't backed up my iphone 6S for a year, I know, not a good idea, when I tried to back it up, the time to back up went from five minutes, to twenty, to an hour to two hours, is this normal?

yes, if you're backing up to icloud and if you haven't done so in a long time.
No, something's wrong and it depends on if you are using Wi-Fi or iTunes ...
