My granddaughter shares my Apple account. Music she downloads to her iPhone 6 also loads onto my iPhone 6. If I delete the music on my phone, will it delete that music from her phone?

There is a much better approach to get your own music on your own iPhone, and the same for your granddaughter, regardless of her age.
You should immediately stop sharing an Apple ID. The person who gets the new Apple ID should do so as described here.
