How to create Tables in Sierra?

I used to have the OS X Lion version and was able to create Tables, but now in Sierra there seems to be no info on how to do this. It used to be available in Launchpad>Text Edit.

Is there any way to set up a table without using a Mac/Apple template with Catalina? Hi, I bought a Mac mini in January, not realizing just how poorly Pages and also Numbers are designed with regard to setting things up from scratch yourself. I am trying to avoid getting Office for Mac since I as I understand it, you can no longer just purchase Office. When I make a table, I prefer to choose my own number of rows and columns and to start with no shading. Then I like the freedom of shading anything I want to, even adjoining cells with different fonts or shades for certain things I do. I am very frustrated that I can't seem to do that--that a change in one cell changes things I have set elsewhere, and that I cannot seem to control font size easily, etc. In addition, there are times I like to cut and paste text from one cell to a different one, etc. I have a long list of things I no longer have control over, but this is a start.
