Were these for app updates? Were any of these apps downloaded under her Apple ID? If they were, Apps are forever tied to the ID they were downloaded under. If this is the case, either start a Family Sharing plan: Family Sharing - Apple Support
Or delete the apps and redownload/purchase then under your ID
If she purchased and downloaded an app to iTunes (before this capability was removed), and you synced to the same iTunes library then the app that she downloaded would be installed on your phone. It's one reason you need to have separate iTunes libraries (and separate user IDs) if you share a computer.
Delete the apps that were downloaded using her Apple ID, and download them with yours.
Don't share Apple ID.
Start as new and set it up with your own Apple ID.

I don’t think we have any shared apps and we don’t use family sharing. It’s super weird. I haven’t been asked for her ID ever before.

Yeah, but the issue says otherwise.
If you are not sharing your iCloud ID the only other possibility is shared apps.
That is incorrect. We have never shared IDs.

You must have shared something, whatever that is, you need her password.
We’ve never shared an ID, computer, or family shared. I reset the phone and it went away.
