I'm in the US for a year but I have an Italian credit card. Why can't I use it on the iTunes Store?

You can, but you can't use a card issued by an Italian bank. Do you have one issued by a US bank ? Or to create a new account without having to give payment details (you should be able to use US gift cards to buy paid-for items) : Create an iTunes Store, App Store, or iBooks Store account without a credit card or other payment method - Apple Support
