Guided Access - Sleep mode

is there a way to enable sleep mode during Guided Access?

Using an iPad as a Kiosk, and the display just stays on all day (and night, if no one presses the sleep button). Would like the normal 15 minute sleep timer to "kick-in" during guided access use.

2017 "new" 9.7" iPad

ios 11.2.6

Device is always plugged in to power

How to put iPad to sleep or turn off when it’s always plugged in. We have an iPad set up as a register at our gallery and it’s plugged in 24/7/365 and we want to set it up so it goes to sleep or turns off in evening and wakes in AM — that is a setting on my iMac but I can’t figure out how to do it in the iPad. I’m obviously missing something. Thanks.
