trying to backup my texts and apps to my icloud

I got a new iPhone X. I backed up my iPhone 6 to my iCloud. I turned on my new phone and everything came up except my apps and my texts. What did I do wrong ?

can i use a previous icloud back up to restore my phone? I just got a new iphone 11 pro max. I did an icloud back up on my old phone and then on my new one. All was good. I then deleted all the text messages on my old phone and it automatically deleted it on my new phone. I want to use the previous back up that i did on my new phone to get all my text messages back. is that possible?
