You can't override it. If you've forgotten the restrictions passcode, the only option is to erase the device and set it up as new. You will have to either erase it using Find My iPhone or by forcing the phone into recovery mode and restoring iOS using iTunes. Do NOT restore a backup of the device made after the restrictions were set up. Doing so will restore the restriction settings and you'll be right back where you started.
