cannot transfer NEW photos to iPhone thru iTunes

I'm using iTunes to transfer photos to my iPhone using a Folder full of Folders on my Mac and pointing to it in iTunes. In Other Words: When running iTunes, I select my iPhone icon and then select Photos in the Settings area, I select Sync Photos at the top and Copy photos from: I select my folder in my home directory which I have called "Pictures".


I was NOT able to get all of my photos copied to my iPhone when I select "All folders". The process would run for as much as 7 hours and still not copy all the pics over.


I then tried the method of "Selected folders" , and I select "Include videos". I proceeded to select all the folders I want copied from my Pictures folder. In my Pictures folder, there are 3,439 folders ( ! ), which may be a lot, but I have them ordered by WHO they are, not When and Where. THAT information (When and Where) is not useful to my information.


Even when I select the folders want, I had to select them a few at a time (since they are alphabetized, I selected 1 letter's worth at a time - All the "A" folders, then all the "B" folders, etc) That process LOOKED like it worked, but upon close examination, some pictures from the folder Pictures were NOT copied over. ALSO, when I try to add a new folder to the Pictures folder, the Folder name gets copied, but the pictures IN that new folder DO NOT COPY over. I have tried to re-sync 10 times and it still does not copy new pics over.
