iPhone X typing on it’s own at night

so my iPhone X is wonderful for the most part, but I am super frustrated that it will start typing by itself later in the night (usually after midnight but it currently is working against me as I type this out at 11:36PM EST which is new). I cannot find any help for this and wondered what to do.

If I try to close the app, other apps randomly open up and it even started calling people out of my contacts. It will go absolutely crazy until I turn it off.

I tried turning off dictation, this turns off auto typing while texting with a symbol in the text box that I can use if I want to use dictation in messages, but then I have no mic and no similar box to use for mic in safari for typing. I like to use dictation just not turned on all the time. It is only on all the time in texting mode. This is new since last update.
