Screen tap combination

Is there a list or guide that I can use that shows me what tap combinations do on an Ipad\IPhone? For example, with voice over, a single tap selects a field and a double tap activates the function (e.g. continue or back).

This is to help a visually impeded friend, as some combinations that she is using with Voice Over also appearing to launch music
