There are several variables. The actual repair should be less than an hour. But it depends on whether or not your Apple Store or AASP has it in stock, and if they do how busy their technicians are. If they don't have it in stock it can be sent to a service center where it will take longer and you're going to pay a shipping charge in addition to the glass repair charge.

Another possibility is that they have "replacement devices" in stock and they simply exchange your damaged iPhone for a replacement. Sometimes this is what happens when it's sent in. You have no guarantees that they won't do that, so it's important to back up your iPhone before you bring it in for any kind of service.
