I am being laid off and want to save my email from outlook in pst files onto a thumb drive and be able to view on my mac

You can't do that on an iOS device. If your company has set up the Exchange server correctly you can't do it at all. And if they haven't your Outlook messages are company property, and keeping them can get you into legal trouble.

In addition to what Lawrence provided, you might want to make sure your contacts are not all tied to your Outlook account. If they are, you're going to lose them as well.
