You can do this in Settings > Do Not Disturb. Scroll down to "Do Not Disturb While Driving" and select the option you'd like (Automatically, When Connected to Bluetooth, Manually). Manually will disable it until you turn it back on.

This feature was good in theory, but has totally screwed me over with business deals! It’s one thing to not be disturbed...BUT TO NOT BE NOTIFIED AT ALL...EVER, that there were calls or texts or emails when your iPhone THOUGHT you were driving is a complete Disaster!! I literally FOUND texts and voicemails an entire WEEK LATER Because of DO NOT DISTURB WHILE DRIVING!! 👎-1F3FB;👎-1F3FB;👎-1F3FB;👎-1F3FB;👎-1F3FB;👎-1F3FB;👎-1F3FB;👎-1F3FB;👎-1F3FB;👎-1F3FB;👎-1F3FB;
